apple pumpkin parfait

I used to think pumpkins were just for decoration or for carving Jack-o-Lanterns. Not anymore! If it sprouts from the ground, I try to find a way to eat it. You wouldn’t believe how much money this saves! JK - only halfway.

Seriously folks, did you know that pumpkin is packed with Vitamin A, a necessary vitamin for good eyesight? And did you know that 1 cup of cubed pumpkin only has 30 calories?? Pumpkin also contains Vitamin C and a modest amount of fiber. This is sounding like a super food to me!

Lastly, did you know that pumpkin is also good for you dog? Many of my dog savvy friends have told me to give my dogs pumpkin if they are experiencing GI upset. In fact, many of my human friends feed their dogs pumpkin on the reg.

So if you’re thinking of turning your Halloween decorations into a meal, you can feed both yourself and your Fido. Here’s a place to start.

Makes 2 servings

Ingredients:

1/2 apple, diced

1 cup pumpkin cubes, steamed

1 Tbs almond or other nut butter

1/2 Tbs chia seeds

1-2 Tbs honey, depending on desired sweetness

3/4 - 1 cup yogurt

1/2 tsp pumpkin pie spice blend or a combination of cinnamon and nutmeg

1/4 cup toasted pecan pieces or halves

Instructions:

  1. Cut pumpkin meat into 1” cubes. Steam in Instant-Pot 6 min or until tender in double-boiler. Let cool completely.

  2. Whisk together nut butter, chia seeds, honey, yogurt and spice(s).

  3. In a pint Mason Jar, layer apple, yogurt mixture and pumpkin.

  4. Top with toasted pecans. Optional: Drizzle with more honey.

  5. Eat immediately or refrigerate overnight.
