citrus roasted carrots
Ingredients:
1 lb mix of yellow and orange carrots, washed and peeled
1 tsp coriander seeds
1/2 tsp ground turmeric
1/4 tsp smoked paprika
Zest of 1 lemon
2 tsp olive oil
1 Tbs orange juice, or juice from 1 lemon
1/2 tsp Kosher salt
8 grinds black pepper
Instructions:
- Cut thick carrots in halves or quarters lengthwise, so that they are fairly uniform in size. Cut crosswise to create 4-inch lengths. 
- Place carrots on a piece of aluminum large enough to accommodate all carrot spears with enough left over to close around the carrots. 
- Sprinkle remaining ingredients evenly across carrots in aluminum foil. 
- Close aluminum foil into a packet. 
- Place aluminum packet on hot grill or in 375-degree oven. Cook undisturbed for 25 min. Remove from heat and let sit 10 min before opening foil packet to serve.
