 patriotic salad

This is a great red, white and blue salad to take to your neighborhood 4th of July party. It couldn’t be easier and is so easy! You can double or triple the proportions for a crowd. White onion can be quite strong, but it is tempered by the balsamic vinegar which brings out the sweetness of the onion and the blueberries. But if onion isn’t your ‘thang’, add halved miniature mozzarella balls instead. This will keep your patriotic salad red, white and blue and add a little protein to boot!

Ingredients:

2 small red tomatoes

1 Roma tomato

8 cherry tomatoes

1/2 medium white onion

1 cup whole, rinsed blueberries

Salt & pepper to taste

Olive oil and balsamic vinegar

Instructions:

  1. Halve cherry tomatoes and cut other tomatoes into bite-sized pieces.

  2. Dice onion.

  3. Combine tomatoes, onion and blueberries in a medium bowl and add salt and pepper to taste.

  4. Dress with your choice of olive oil and balsamic vinegar.

Dressing notes: While any combination of olive oil and balsamic vinegar will do, I used Persian-lime flavored olive oil and blueberry flavored balsamic. You could could substitute lemon juice if you don’t have any balsamic handy.
