 Spicy Turmeric quinoa

Ingredients:

1 c. quinoa

1 1/4 c. water

1/2 - 1 tsp. turmeric

Pinch cayenne pepper

1/2 tsp salt

Drizzle of honey (preferably local)

Add all ingredients to an Instant Pot and cook under regular pressure for 3 min. OR add all ingredients to a saucepan and cook according to quinoa package instructions, ususally about 15 min until all liquid is absorbed.

This is a wonderful side dish with Fall veggies and pork loin, but also makes a great base for a Buddha bowl. With leftovers, you can make a yummy breakfast by reheating and topping with some toasted pecans, sautéed apples and a dash of cinnamon!
